We are opening up our Community from Private to a Hybrid, where anyone can come in and look around but require a login to participate. However we have some content that we want available to our customers only, is there a way that we can keep certain categories / subcategories private?

If you go to the back end of your community, you can specify who has which rights per subforum under the platform heading. 

Go to Platform, then Community and select the subforum you want to access. 

You can then decide which role has which rights to view a subforum and create topics in the subforum.
