Some of our community members are really persistent in using the @user tagging feature to ask questions to specific employees, which we would rather not allow. Is it possible to disable this feature for specific user groups?

Unfortunately it’s not possible to disable this functionality for specific users. I would recommend that you raise this as an idea to see if other communities would find this useful, describing your use case and how you would like to see this work.
In the meantime, I think it would be best to educate your community members to not tag your colleagues, either through explicitly stating that they should only use this feature in certain circumstances (emphasising that it’s not a good method to get faster responses and that it’s not the purpose of the community) or implicitly by ensuring that other colleagues or community members are answering the questions that your employees are tagged in.
