I have seen some info on milestones in the community, but I do like how the Gainsight University has their courses setup: the learner cannot end/complete the course until they have clicked through all sections of the SCORM course. I wanted to know if anyone has the steps on how to mimic this in CE?

I don’t have a quiz in all of my courses and when adding a milestone for SCORM, it says the learner must complete the SCORM activity with a minimum score %. Any help would be appreciated, even from the GS Uni team on how they accomplished this would be great.

You are exactly right. Adding a Milestone will ensure that users click through your entire course to get credit. Even if you don’t have a quiz, add the Milestone and select the SCORM activity with a minimum score of 100%. You can think of this as 100% of the course content. We like to name our Milestones as “Congratulations” to signal that they’ve reached the end of the course. I hope this helps.
