I need to build a report that we can track & measure outgoing engagements and how that can translate into results - expansion in renewals.

What is the best way to build this?

The best way of doing this is to write the engagements into SFDC campaigns and to then have your analytics team create dashboards of CS touch influenced renewals/upsells as they do for marketing influenced pipeline. This would create a comprehensive view of influenced pipeline. 

Now, if you want to do your thing in GS, you’ll have to use data designer to identify the opportunities that were touched, how they were touched by CS, and the rest will depend on what you want: renewal success rate, influenced upsell ARR…
