How do I create a new field on the person object?  I know how to do it on the company level, I just don’t know where to start navigating.

Search for Data Management from the left menu (part of Administration). Then search for the object Person (or Company Person). After you click on the object name, you’ll have the option to Add a field to the object. If the field you need to create relates to their relationship to the company like Title, Department, Mobile number etc. that could change over time then create the field on Company Person object.
