We observed that the Role present in Survey participant object is pulled from Company person object.
But can we make use of any custom field created in Company person object to be used in Survey Participant object.

If I understand this ask correct, you want to know if one can use Company Person.some custom field to fill in for the Survey Participant.Role attribute for the Surveys built organically from Gainsight.
Ans: Nope, this is not supported for organic Gainsight Surveys. But if the same ask is applicable for the externally loaded responses (NPS / CSAT) then that’s flexibility exists for Load to Survey Rule Action.
