Auto Generate Cover Image from Content

We have a wide variety of courses created by different companies. Right now each course has the logo of the course “owner” as the cover image. It would be easier to access materials if instead of clicking through 30+ of the same logo, a thumbnail of the PDFs/Videos showed as a cover image.

Doing this manually was not an option- can it be automated?
