I noticed that the fields on Log an Email are the same as the fields for the calls and the meeting, and that doesn't seem to make sense. Could the fields be changed accordingly.

Makes sense. What you can do as an immediate fix is change the labels for this particular Activity type (Admin -> Activities), like so:
Ah. Great. Thanks, Manu! When I click on the Activities tab in the sandbox, I get an Insufficient Privileges message. I'm guessing our SF Admins need to give me access to Edit something then?
Could be about access to that particular VF page. Could you email me a screenshot?
I was able to update the labels without issue.
