When you add the lookup to any object, it is saved as the ID and not the actual name. The c360 attributes section (on the backend) converts that ID to a String - Name so you see "John Doe" instead of ZX000001AB3293 for that field.This is important because it explains why this field doesn't have the option to be editable at this time. If you change the String (name) to something else in Gainsight, c360 doesn't have an index to then convert that string back into the proper ID again. 

Please create an index in Gainsight so we can convert that string back into the proper ID again so we can make lookup fields "editable" in the Attributes section on the c360.

Let's assume CSM is a User lookup field added to the Attributes section. As you pointed out, we show the CSM Name (Sally) and not the actual ID. It is possible to change this name to John, and we do update the ID automatically. Are you experiencing issues with this ID not updating correctly, or are you simply requesting that there be an option to expose the IDs directly instead of always defaulting to a name?
