A useful feature would be the ability to organize CoPilot email templates either by some type of folder system or by tags that can be placed on the template.

Couldn't agree more. From an adminsitrative perspective, copilot (power lists & templates) require more organization. Here's a similar idea: https://community.gainsight.com/gainsight/topics/copilot-template-folder-structure

Can we also consider updating CoPilot Email templates to reflect "X playbooks using this template" for Email Assist -  in addition to the existing "X outreaches using this template"?  Or will the new approach for organizing CoPilot Email Templates also help with the challenge of keeping track of Email Assist templates (beyond a standard naming convention)?

I agree with Elaine. Would like an indicator on the Email Templates page to also show me if I'm using it in a playbook as well.
