We are only able to map to text fields in the filters on dashboards in GS but I would love to be able to also map to dropdown fields for filters so we are not limited in what we can filter on in there.

Dropdowns is a current ability. Are you defining a dropdown when adding a global filter?
Looks like it also works for Multi-Select also!
