With this new formatting option (or even independent of it), is there any way to control the width of the inline question in the email template? This looks fine on preview, but stretches waaaay out when I actually send a test email.

Is the email template you are using in As is Or Responsive Mode?
One of the reasons this might happen is that the template is in responsive mode.

Please navigate to Email Template and see this option and check if the option is Responsive. If that is the case, please change it to As Is and try doing a test email and see if you are still facing this issue.
